Keto Caramel Pecan Turtles Recipe

Keto Caramel Pecan Turtles Recipe

These sweet treats are a Keto version of classic “Turtles” – a combo of savory pecans held together with sweet caramel and dark chocolate. Our Keto turtles come together with a homemade Keto caramel sauce drizzled over pecan halves, topped with melted dark chocolate and sprinkled with flaked sea salt for a perfect sweet-salty bite you won’t be able to get enough of.

The secret to this Keto treat is the caramel sauce, made with brown sugar-style erythritol sweetener, so make sure you’ve got some in your pantry before you get started! Happy snacking! 🐢

Keto Caramel Pecan Turtles

Ingredients

Water
Brown Sugar Replacement by Swerve
Butter
Heavy Cream
Vanilla Extract
Chocolate Chips, Sugar Free
Coconut Oil
Pecans Halves by Southern Grove
Sea Salt Flakes by Maldon

Instructions

1. In a small saucepan, combine the water, vanilla extract, brown sugar substitute, butter, heavy cream and a pinch of salt.
2. Bring to a simmer and allow to simmer, stirring occasionally for 5-7 minutes. Once finished, place in a heatproof bowl and refrigerate until chilled.
3. On a parchment paper lined baking sheet, place 15 piles of 3 pecan halves evenly spaced.
4. Melt the chocolate chips and coconut oil in a microwave-safe bowl on HIGH for 30 seconds. Stir. Add another 20-30 seconds until all the chocolate has melted.
5. Evenly dollop the caramel sauce on top of the pecan halves.
6. Then dollop the chocolate on top of each and sprinkle with the tiniest bit of flaked sea salt (you will not need to full ⅛ t of salt for this). Freeze until firm. Keep these frozen until ready to eat.
