Keto cookies or Low-carb cookies are great snacks as they are sugar-free and are absolutely perfect recipe to make for any occasion.These cookies are soft and are sneaky healthy treat for everyone especially for someone who is on a low carb diet. Guaranteed that they will satisfy sweet treat cravings!

INGREDIENTS:
▪️1/2 cup unsalted butter
▪️1/2 cup Erythritol or any sweetener of your choice (I have used Truvia)
▪️1 teaspoon vanilla extract
▪️1 large egg
▪️1 1/2 cups almond flour
▪️1/2 teaspoon baking powder
▪️1/2 teaspoon xanthan gum (optional)
▪️1/4 teaspoon salt
▪️About 1/4 cup sugar free chocolate chip

INSTRUCTIONS:
▪️Preheat oven to 360°F.
▪️Melt the butter in saucepan in a medium heat.
▪️Beat melted butter and sweetener together in a mixing bowl.
▪️Add the vanilla extract and egg, and beat until well combined.
▪️Add the almond flour, baking powder, xanthan gum and salt. Beat until well combined.
▪️Shape the dough into flattened circles making 12 portions and place on a lined baking tray.
▪️Bake for 10 to 15 minutes.
▪️Serve, share & enjoy!
