KETO/LOW CARB/FAMILY MEAL PREP | Chicken, Spinach & Ricotta Lasagna

This meal can be used for the Keto or Low Carb diet. Just ensure to compensate your other nutrients throughout the day to reach your nutrient goals. For the lasagne noodles you can use bacon to increase the fat content, or ham for low carb. If you want to make this for the family as well just replace the bacon/ham with any cooked lasagne noodles.

Ingredients for 12 Servings:
Red Sauce:
1 kg Chicken Thighs, diced
6 tbsp Butter
2 tbsp Garlic, minced
4 tbsp Oregano, dried
4 tbsp Basil, dried
Salt & Pepper to taste
500g Marinara
½ cup Water
2 tbsp Tomato Paste
1 cup Water

White Sauce:
500g Frozen Spinach, thawed and drained
2 x 375g Ricotta Cheese
300g Cream Cheese
2 Eggs
Pepper to taste

Lasagna Noodles:
About 500g Bacon
Optional: Olive Oil for frying

350g Cheddar Cheese
Garnish: Oregano

Ingredients for 6 Servings:
Red Sauce:
500g Chicken Thighs, diced
3 tbsp Butter
1 tbsp Garlic, minced
2 tbsp Oregano, dried
2 tbsp Basil, dried
Salt & Pepper to taste (optional)
250g Marinara
¼ cup Water
1 tbsp Tomato Paste
½ cup Water

White Sauce:
250g Frozen Spinach, thawed and drained
1 x 375g Ricotta Cheese
150g Cream Cheese
1 Egg
Pepper to taste

Lasagna Noodles:
About 250g Bacon
Optional: Olive Oil for frying

175g Cheddar Cheese
Garnish: Oregano

Preheat oven to 350oF.
To prepare the red sauce, dice the chicken thighs.
Over medium heat, melt the butter, then add the chicken and cook for about 5 minutes, stirring occasionally.
Next, add the garlic, oregano and basil and stir, breaking up the chicken further. Add salt and pepper to taste and combine to further season the meat. Then add the marinara sauce, water and tomato paste. Stir once more then close the pot/pan and turn down the heat to medium-low and simmer for 20-30 minutes. One cooked, turn off the heat and add more water, then stir.

To prepare the white sauce, to a bowl add the spinach, ricotta and cream cheese, eggs, and season with pepper. Then mix together until fully combined, first by hand to avoid spraying, then you can use a hand mixer. Store in the fridge until ready to assemble.

Lightly fry the bacon. If you’re using ham there will be no preparation required. To prepare pre-made lasagna noodles immerse in boiling water for a few minutes to ensure they are soft when the dish is complete.

To assemble:
In an ovenproof rectangle dish, layer the dish as below:

1. Thin layer of tomato sauce
2. Bacon
3. Tomato Sauce
4. White Sauce
5. Cheddar
6. Tomato sauce
7. Bacon
8. White sauce
9. Tomato Sauce
10. Cheddar Cheese
11. Sprinkle of Oregano

Bake for 20 minutes or until top begins to brown.
Allow to cool, then cut into 6 even servings, then add one serving each to a meal container.
Can be stored in the fridge and is an excellent freezer meal.
