2 cups diced yellow onion
28 ounce can crushed tomatoes
1 Tbl minced garlic
1 Tbl Italian seasonings
1 Tbl avocado oil
1 ½ tsp garlic powder
1 ½ tsp onion powder
Salt, pepper, red pepper flakes

Carmelize your onions in 1 Tbl avocado oil. Add in 1 Tbl minced garlic. Coook for a minute or two. Add in spices – cook the spices for about 30 seconds then add in can of crushed tomatoes. Simmer for at least an hour – longer for more flavor.

6 -8 Servings (2 tenders) – depends on the size of your tenders

2 pounds chicken tenders
5 ounces of pork rinds
½ cup coconut flour
4 eggs (I had a lot left over in this video, so I don’t think 5 is necessary)
Onion salt, garlic powder, pepper, red pepper flakes

Crush up the pork rinds. Make yourself a breading station – pork rinds, eggs, coconut flour. Add seasonings to each layer of the breading ingredients. Dip chicken into coconut flour, then egg, and finally the pork rinds.
Cook in your air fryer at 380 degrees for 10 minutes, flip and cook for another 2-3 minutes. The cooking time depends on your air fryer and the size of your chicken tenders.
