This is my lunch these days. A delicious low-carb recipe coming from my homeland Italy. Very simple ingredients are needed and the result is an explosion of flavors.
At the end of the video, I included the macros breakdown.
I cook this on Saturday and keep it in the fridge in single portion until Friday when I eat the last piece.
This frittata is made with zucchini, spinach and parmesan cheese (though you can use cheddar too) and it’s cooked in the oven.
You can serve this with cherry tomatoes with olive oil if you want to have more calories.
