Keto Pancakes

1/2 cup Almond Flour
4oz softened cream cheese
1 tsp baking powder
4 eggs

* mix together and fry in coconut oil or butter*

Chicken, Bacon, & Spinach

Chicken tenderloins cut into bite size pieces
3 slices of bacon
1 garlic clove
2 cups fresh spinach
1/4 cup heavy cream
Handful of shredded parm
1 tbsp. butter

* Season chicken & grill in coconut oil- throw in bacon until both are cooked. remove from skillet . Add in garlic and sautee. Mix heavy cream, parm, & butter until it starts to thicken. *

Chicken curry in butter sauce w/roasted cauliflower

1 head of cauliflower
1 package of boneless skinless chicken thighs
curry seasoning/salt/pepper
1 small onion
1 Garlic cloves
1 jar of butter sauce or curry sauce

*Heat coconut oil in a medium pan. season chicken generously with salt/pepper/curry seasoning. Sautee the onion and garlic for just a few minutes before adding the chicken on top. Sear on both sides before transferring to a 375 degree oven for 30 minutes. While they cook mix the jar of sauce into the onion/garlic mixture and let simmer until thickens. Cover and set aside.

Chop the garlic roughly and spread evenly on a lined baking sheet sprayed with olive oil. Season cauliflower with seasonings of choice and bake for about 20 minutes or until softened to liking.
