For the entire recipe yielding 1 1/2 cups of hummus:
Calories – 767
Fat – 64g
Net Carbs – 6g
Protein – 31g
Ground Lupin – 1/2 cup
Water – 1 cup + approx 1/4 cup, divided
Himalayan Pink Salt – 1/2 tsp or to taste
Cumin Powder – 1/2 tsp
Lemon Juice – 1 Tbsp or to taste
Tahini – 2 Tbsp
Extra Virgin Olive Oil – 3 Tbsp plus additional for garnishing
Garlic – 1 clove
Paprika – for garnishing
1. In a microwave safe bowl, add Lupin, Salt and 1 cup Water. Microwave for 3 minutes.
2. Add cooked Lupin to a blender jar along with Cumin Powder, Lemon Juice, Tahini, Olive Oil, Garlic and few tablespoons of water.
3. Grind to a smooth paste, adding additional water if needed to help grind.
4. Spread hummus on a platter and drizzle Olive Oil and sprinkle paprika on top.
