Keto Friendly Zucchini Noodles in a Beef Coconut Curry

Recipe:
1lbs ground beef
1/2 to 1 can (about 2-4 tablespoons) Thai red curry
1 tablespoon curry powder
1 can high fat coconut milk
1 can beef consomme (+1 can water)
2 onions chopped
1 tomato chopped
1/2 red bell pepper chopped
10oz sliced mushrooms
1 handful chopped cilantro (save some for topping)
1 handful chopped Thai basil
1 stalk lemongrass
4 kaffir lime leaves
3 zucchini spiral cut into noodles (low carb option)
lime juice (optional)
fish sauce (optional)
regular noodles or pasta (optional if you don’t want low carb)

Cook ground beef till browned. Add spiced and veggies (except zucchini noodles). Add liquids and cook 20min on medium high. Add zucchini noodles bring back to a boil and turn off heat/cover 5min. If you are using regular noodles, precook noodles in a second pot, then ladle finished curry over noodles to serve. Sprinkle with a little cilantro to serve. Enjoy!
