60 g spinach
1 roma tomato, chopped
480 mL egg white
salt, pepper, to taste

✅Preparation
1.Preheat the oven to 350˚F (180˚C).
2. Lightly grease a muffin tin. Then divide equally the spinach across 6 cups.
3. Fill the cups with the tomato and egg whites.
4. Season with salt and pepper.
5. Bake for 15 minutes, or until the whites have set.
6. Serve hot.
