How to make marinated shrimp – This cilantro marinated shrimp recipe is very easy to make and it is delicious. I am cooking it on a grill with indirect heat but you can easily make this in a skillet with a little bit of oil. This is a delicious keto shrimp recipe.
When you are cooking shrimp you must be careful not to overcook it. If you do it will be rubbery. As soon as the shrimp changes color to salmon/pink it is ready. Flip it over and finish cooking until the other side changes color as well.
This is also a great marinated shrimp appetizer. It is also keto friendly!

1 bunch of cilantro
3 whole scallions
2 garlic cloves
1 jalapeño seeded with no membrane (optional)
1 tsp salt
pepper to your liking
1/4 cup olive oil
juice of 1 lime
Blend all ingredients in a blender until smooth. Cover shrimp in marinade and leave in refrigerator for approximately an hour.
Heat your grill. We are going to cook these on indirect heat which means light only HALF the grill, oil it lightly and place the shrimp on the half that is not lit. No direct heat on the shrimp.
Check your shrimp about every 5 or so minutes and when the part that is face down has turned a salmon or light pink color it is time to flip them. If your shrimp are too small for the grill you may skewer them.
You may also cook the shrimp in a lightly oiled skillet in the kitchen. In this case the “indirect heat” rule does not apply but make sure to check your shrimp often and look for that “salmon” color as you do not want to over cook them. When they are done you may serve and enjoy!
