Instant Pot Keto Beef Stroganoff
1 lb stew beef
½ c chopped onion
1 Tbsp olive oil
1 Tbsp butter
1 heaping tbsp chopped garlic
1.5 c chopped mushrooms
1 Tbsp Worcestershire sauce
1 tsp salt
½ – 1 tsp pepper
¾ c beef broth
½ c sour cream
¼ tsp xantham gum

Set instant pot to saute. Once it says “HOT”, add oil & butter to coat. Add beef, onion, mushrooms & garlic. Cook for 4 – 5 minutes, stirring occasionally & scraping any flavor bits from the bottom of the pot. Add spices, Worcestershire sauce & broth. Lock lid on IP and cook on high pressure for 20 minutes. Let the pressure release naturally for at least 10 minutes. Set pit on saute again to get liquid to reduce. If needed, add xantham gum, whisking vigorously. Remove the liner from the pot & allow mixture to cool slightly. Add sour cream and stir well.
