1 lb. Cleaned Devein Shrimp
2 Cups Broccoli Chopped
1 Small Sliced Carrot
1 Cup Mushrooms Sliced
2 Cup Bok Choy
1 Small Onion
1 Small Shallot
1/2 Cup bean sprouts
1/2 Cup Chopped Green Onions
3 Clove Chopped Garlic
1 Tbsp Chopped Ginger
1 long sliced Chinese Eggplant
3 Tbsp Liquid Aminos or Coconut Aminos
3 Tbsp Sesame Oil
2 Tbsp Chili Garlic Sauce
2 chopped red /green peppers
1. Preheat your stovetop to high. Spray your non-stick pan or wok with avocado oil. First Cook your shrimp in pan, then add garlic, shallots and sesame oil. Cook and Stir for 3 minutes, then remove shrimp and set aside.
2. Add more sesame oil in the wok then add eggplant, carrots, and mushroom. Stir for a few minutes then slowly add the rest of the vegetables.
3. Keep stirring on high heat to all your vegetable are cooked. Turn off stove top, finally add your shrimp to the vegetable mixture, add liquid aminos, chili sauce, and last add some scallions.
Now it is done and ready to serve.
