Nutritional Values: 463 calories, 5g carbs (7g fibre), 33g fat, 34g protein

Filling

500g Beef Mince (20% fat)

1/2 or 60g diced onion

1 can (400g) plum tomatoes

1 clove garlic / 1/2 tsp garlic paste

1/2 tsp cayenne pepper
e

1 tsp pink himalayan salt

1tsp habanero hot sauce

1 + 1/2 tbsp coriander / cilantro

1 tsp ground black pepper

OPTIONAL

1/2 tsp xanthan gum to thicken the filling

1 tbsp apple cider vinegar to deglaze the meat before adding the tomatoes

Dough

125g flaxseed / linseed

250g shredded mozzarella

1 tsp baking powder

2 eggs beaten (save some for egg wash)

I am getting into easter recipes but not just classic stuff, so we’re starting with Beef Empanadas which I discovered are a typical Easter food in South America.
The dough is surprisingly not fathead, or at least not properly. Because of Almond Flour and Cream cheese usually fathead dough brings in carbs too, which added to the filling with the tomato bringing in carbs already (12 to 18g, depending on brands) I opted for my own fathead version which we had a glimpse of in the sweet and savoury donut holes last year, so all you need to make these happen is some flaxseed / linseed, mozzarella and egg.

I also left the values for the ingredients as added, but I personally drained the fat from my beef filling as I was frying it cause it really had a lot, that probbably lowered the calories of a good 100 per empanada.
