I had some shredded chicken and zucchini laying around so I made this easy keto recipe – parmesan chicken in zucchini boats. Find the easy keto recipe steps and ingredients below!
► Keto Chicken Parmesan Recipe in Zucchini Boats Recipe Ingredients:
– 2 cups shredded chicken
– half cup shredded mozzarella cheese
– 1 cup of marinara sauce (there may be leftover sauce depending on zucchini size)
– 2 zucchinis
– 2 tbsp pork rind crumbs
– salt & pepper
– Italian seasoning
► Keto Recipe Steps:
0:00 – Intro
0:01 – Grab 2 zucchinis
0:02 – Slice them in half
0:03 – Scoop out the insides to form little boats
0:05 – Grab some cooked shredded chicken, mix it together with the scooped out zucchini and stuff the mixture into the empty zucchini boats
0:07 – Add a pinch of salt and a pinch of pepper to each boat
0:11 – Add some Italian seasoning to each of the boats
0:13 – Place into preheated oven at 350 degrees and bake until tender, bake for about 15 minutes.
0:15 – Add some marinara sauce to cover the chicken for each boat.
0:17 – Add as much shredded mozzarella cheese as you wish
0:18 – Top it all off with some pork rind crumbs
0:20 – Then broil for 2-3 minutes, or until crisp and golden brown.
