Keto Recipe – Thai Style Low Carb Peanut Chicken

This earthy, sweet, spicy concoction will have you chugging down your water and then wanting even more. It’s a refreshing change from the normal ground beef or bacon, and it’s really worth putting in the extra effort to make.

I didn’t have any peanut butter in the house, so I decided to make my own. It’s really easy to do and only takes about 7 minutes in the food processor. Just continuously grind the nuts until they become creamy and viola!

6 Boneless, Skinless Chicken Thighs
1 Cup Peanuts (1/2 Cup Peanut Butter if you aren’t making your own)
1/4 Cup Chicken Stock
2 Tbsp. Soy Sauce
1 Tbsp. Orange Juice
1 Tbsp. Lemon Juice
1 Tbsp. Rice Vinegar
1/2 Tbsp. Coconut Oil
1/2 Tbsp. Erythritol
1/2 tsp. Sesame Oil
2 tsp. Chili Garlic Paste
1/4 tsp. Coriander
1/4 tsp. Cayenne Pepper
Salt + Pepper to taste
